ANALISIS KUALITATIF DAN KUANTITATIF BORAKS PADA BAKSO TUSUK DI WILAYAH KOTA YOGYAKARTA, DAERAH ISTIMEWA YOGYAKARTA
Abstract
Abuse of borax in food is increasingly happened. Meatballs pricker is one food that is easy to find and loved because of the price is very cheap. Using borax in food additives have been banned by the government because it can be dangerous to human body. The purpose of this research is to know whether the meatball pricker in Yogyakarta is free of harmful food additives etc borax.
This research method is descriptive laboratory and sampling by district and taken two cross-sectional samples. The qualitative analysis is rottenness test, flame test using ethanol and sulfuric acid, and turmerik paper test. Quantitative analysis is titration using HCl 0,057N and methyl orange as indicator.
Result from the research are 3 samples from rottenness suspected of containing borax, only 1 flame test positive samples of green flame, all samples positive borax on turmerik paper test. For quantitative analysis such as titration, all positive samples were obtained containing borax with the average level 3,26%, the highest levels of as much as 5.83% and 1.51% is the lowest levels.
